A COLLABORATION between Saint Lucian craft brewery Antillia Brewing Co., luxury resort CapellaMarigot Bay and chocolatier Cocoa Carib has resulted in handcrafted ale for the resort and its guests.
Capella’s Moon Bay Chocolate Stout incorporates a great proportion of freshly roasted, local St. Lucian cocoa nibs in the process. Modelled from a classic Irish Style dry stout this complex ale uses six different barley malts and wonderfully balances fresh hops for bittering and natural preservative to create a smooth and flavourful chocolate stout.
The official launch took place at Capella on Monday afternoon.
Antillia’s CEO Andrew Hashey said: “I was approached by Capella and their chocolate experience supplier Jason Marcellin with this boutique ale collaboration concept. The project was incredibly intriguing to us. To have access to some of the finest and freshest cocoa nibs in the world presents a unique opportunity for a craft brewer. To my knowledge we are making history as this is the first collaboration between a brewery and a destination resort in the West Indies or beyond.”
“Though we brew mainly traditional ales and stouts this island has a fabulous range of natural agricultural products that we have been incorporating into our ale recipes. We think this chocolate stout will also help focus attention on Saint Lucian chocolate and its incredible heritage”.
“The name Moon Bay Chocolate Stout is partly in recognition of the astronauts from the 1972 Apollo 17 mission to the moon who came to Marigot Bay to relax and recover from their mission,” states Capella Food and Beverage Manager Glenn Sorensen.
He added: “Working with Andrew and Jason on this collaboration has been an absolute pleasure. The beer is well balanced and absolutely delicious. Antillia has created a world class beer for our resort and marina, a beer that puts us on the map for beer destination tourism. More importantly it adds another special and unique experience for our resort and Marina guests.”
Capella Moon Bay Chocolate Stout will only be available at the resort and marina and at the Antillia Brewery Taproom in Rodney Bay.
